We’ve all been cooking different variations of banana bread throughout 2020. Google searches “How to make banana bread?” actually increased almost 150 percent during 2020 which was probably an accurate reflection of your Instagram feed. We are sure you’ve perfected your version of it but here is another recipe you must try, Chrissy Teigen’s Banana Bread! 

Chrissy Teigen is famous for her delicious recipes. In her book Cravings: Hungry and More you can find delicious recipes ranging from banana bread to creamy cacio e pepe. There are so many banana bread recipes out there but this one is like no other. It’s moist, has a great balance of sweetness with chocolate chips without being too sweet. It’s perfect to serve for breakfast, snacking, or dessert- basically any time of the day with any meal. This recipe can work as a loaf, muffin, bundt cake, and way you like to serve it. Once cooked serve it with Irish butter in the morning for breakfast or with a side of vanilla ice cream for dessert. 

One of the reasons why people love to cook banana bread is because it’s easy and simple. This recipe defers a little from the others, first of all, it has a lot of bananas! Second, there are unexpected ingredients such as instant pudding and shredded coconut that actually adds a lot of flavor! Below is the recipe, try it for yourself! 

Chrissy Teigen’s Banana Bread 

Yield: Roughly 12 servings Prep Time: 20 minutes Cook Time: 60-80 minutes 

2 cups of mashed brown bananas ( 5-6 bananas)
2/3 cups canola oil
4 eggs
2 cups all-purpose flour (and extra to dustpan with)
2 cups sugar
1 box vanilla instant pudding mix
1 teaspoon baking soda
1 1/2 teaspoons kosher salt
1 cup unsweetened shredded coconut
1 (3.5 oz) bar dark chocolate (chopped into chunks) or unsweetened chocolate chips 

Heat oven to 325 Fahrenheit.
Fold in the wet ingredients- mashed bananas, eggs, oil- together.
In a separate bowl mix the dry ingredients- flour, baking soda, salt, sugar, pudding mix.
Add the shredded coconut and chocolate to the dry ingredients. 
Get your pan ready- grease it and coat it with flour to make sure it doesn’t stick.
Bake until either the cake bounces back when pressed or it doesn’t stick when you cut it through. This can take up to 80 minutes depending on the pan.
Let it cool before you serve it!

Robo recommends using a bundt pan. 
Use a big ball because you will have a lot of bananas to mash. 
Make sure your bananas are very brown and ripe.
You can keep it refrigerated or out in an airtight container.
